• ¼ cup pumpkin seeds (pepitas)
• 1 tablespoon flaxseeds (optional)
• 1 tablespoon rolled oats (for topping)
Instructions
1. Activate the Yeast: In a small bowl, mix warm water, honey (or maple syrup), and yeast. Let it sit for about 5–10 minutes until foamy.
2. Prepare the Dough: In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.
3. Knead the Dough: Transfer the dough to a floured surface and knead for about 8–10 minutes, until smooth and elastic.
4. Incorporate the Seeds: Gradually knead in the sunflower seeds, pumpkin seeds, and flaxseeds (if using).
5. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
