Description

This Sub in a Tub is a low-carb, keto-friendly twist on a traditional sub sandwich, served in a bowl instead of bread. Packed with fresh veggies, deli meats, cheese, and flavorful dressings, it’s a perfect meal for those looking to cut carbs while keeping all the classic sub flavors!


Ingredients

• 2 cups shredded lettuce (romaine or iceberg)

• ¼ cup sliced tomatoes

• ¼ cup sliced cucumbers

• ¼ cup sliced red onions

• 6 slices deli meat (turkey, ham, salami, or roast beef)

• 2 slices provolone or Swiss cheese, chopped

• ¼ cup sliced banana peppers or jalapeños (optional)

• 2 tablespoons black olives (optional)

• 2 tablespoons mayonnaise, oil & vinegar, or sub dressing

• 1 teaspoon Italian seasoning or oregano

• Salt & black pepper to taste


Instructions

1. In a large bowl or meal prep container, spread out the shredded lettuce as the base.

2. Arrange sliced tomatoes, cucumbers, and red onions evenly over the lettuce.

3. Roll up deli meats and slice them into bite-sized pieces, then add them to the bowl.

4. Chop the cheese into small squares and sprinkle over the top.

5. Add banana peppers, jalapeños, and black olives if using.

6. Drizzle with mayonnaise, oil & vinegar, or your preferred dressing.

7. Sprinkle with Italian seasoning, salt, and pepper.
