Ingredients
• 4 large artichokes
• 1 cup Italian-style breadcrumbs
• ½ cup grated Parmesan cheese
• 3 cloves garlic, minced
• ¼ cup fresh parsley, chopped
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp red pepper flakes (optional)
• ½ cup olive oil
• ½ lemon, juiced
• 1 cup chicken or vegetable broth
Instructions
1. Trim and prepare the artichokes, removing tough leaves and soaking in lemon water.
2. Combine breadcrumbs, Parmesan, garlic, parsley, salt, and pepper in a bowl. Mix with olive oil.
3. Stuff the breadcrumb mixture between the artichoke leaves.
4. Place in a pot with broth, cover, and simmer for 40-45 minutes until tender.
5. Serve warm with an extra drizzle of olive oil.
