Description
These homemade Strawberry Muffins are soft, fluffy, and packed with fresh strawberries. A perfect sweet treat for breakfast or snacking!
Ingredients
• 1 ¾ cups all-purpose flour
• ¾ cup granulated sugar
• 2 tsp baking powder
• ½ tsp salt
• ½ cup unsalted butter, melted
• 2 large eggs
• ½ cup milk (whole or buttermilk)
• 1 tsp vanilla extract
• 1 ½ cups fresh strawberries, diced
• 1 tbsp flour (for coating strawberries)
• 2 tbsp coarse sugar (for topping, optional)
Instructions
1. Preheat oven to 375°F (190°C) and line a muffin tin.
2. Whisk together flour, sugar, baking powder, and salt.
3. In another bowl, mix melted butter, eggs, milk, and vanilla.
4. Gradually mix wet and dry ingredients until just combined.
5. Toss strawberries in flour and fold them into the batter.
6. Divide batter into muffin cups and sprinkle with coarse sugar.
7. Bake for 18-22 minutes or until a toothpick comes out clean.
8. Cool on a wire rack and enjoy!
Notes
• Use buttermilk for an even softer texture.
• Swap strawberries for blueberries or raspberries for variety.
• Store in an airtight container for up to 3 days.
