• 2 lbs pork shoulder, cut into bite-sized pieces

• 1 can (14 oz) coconut milk

• 2 cups chicken broth

• 4 cloves garlic, minced

• 1-inch ginger, grated

• 2 tbsp vegetable oil

• 1 tbsp fish sauce (or soy sauce)

• 1 tsp ground turmeric

• 1 tsp paprika

• ½ tsp ground cumin

• ½ tsp black pepper

• 1 tsp salt (adjust to taste)

• 1 cup diced tomatoes

• 1 bell pepper, sliced

• 1 small potato, diced (optional)

• 1 cup spinach or kale

• 1 tbsp lime juice

• Fresh cilantro, for garnish


Instructions

1. Heat vegetable oil in a large pot over medium heat. Add onions, garlic, and ginger, sautéing until fragrant.

2. Add the pork pieces, searing until browned on all sides.

3. Stir in turmeric, paprika, cumin, salt, and black pepper, coating the pork with the spices.

4. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and let it simmer for 30 minutes.

5. Add coconut milk, diced tomatoes, and fish sauce, then stir well. Simmer for another 20 minutes.

6. Add bell peppers, potatoes (if using), and spinach/kale, cooking until the vegetables are tender.

7. Finish with a squeeze of lime juice and adjust seasoning if needed.

8. Serve hot, garnished with fresh cilantro, over steamed rice.

Notes

• For extra depth of flavor, marinate the pork in soy sauce, garlic, and black pepper for 30 minutes before cooking.
