Ingredients

For the Pizza Dough:

• 2 ½ cups all-purpose flour

• 1 tsp salt

• 1 tsp sugar

• 1 packet (2 ¼ tsp) active dry yeast

• ¾ cup warm water

• 1 tbsp olive oil

For the Mashed Potato Topping:

• 2 medium russet potatoes, peeled and cubed

• ¼ cup heavy cream or milk

• 2 tbsp butter

• ¼ tsp garlic powder

• Salt and pepper, to taste

For the Pizza:

• ½ cup mozzarella cheese, shredded

• ½ cup cheddar cheese, shredded

• 4 slices cooked bacon, crumbled

• ¼ cup caramelized onions (optional)

• 2 tbsp chopped fresh chives

• Olive oil, for brushing


Instructions

Prepare the Pizza Dough:

1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.

2. In a large bowl, combine flour and salt. Add yeast mixture and olive oil, mixing until a dough forms.

3. Knead for 5 minutes, then place in a lightly greased bowl. Cover and let rise for 1 hour.

Make the Mashed Potatoes:

4. Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain.

5. Mash with butter, cream, garlic powder, salt, and pepper. Let cool slightly.

Assemble the Pizza:

6. Preheat oven to 475°F (245°C). Roll out the pizza dough on a floured surface.

7. Transfer to a baking sheet or pizza stone. Brush with olive oil.

8. Spread the mashed potatoes evenly over the crust.

9. Sprinkle mozzarella, cheddar, bacon, and caramelized onions on top.

10. Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
