• 1 lb ground chicken

• 2 cloves garlic, minced

• 1 jalapeño, finely chopped (optional for spice)

• 1 tomato, diced

• 1 tsp cumin powder

• 1 tsp chili powder

• ½ tsp smoked paprika

• ½ tsp oregano

• ½ tsp salt (adjust to taste)

• ¼ tsp black pepper

• ½ lime, juiced

• ¼ cup fresh cilantro, chopped

• ½ cup shredded cheese (cheddar or Mexican blend, optional)


Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add chopped onions and garlic, sauté until fragrant and translucent.

3. Add ground chicken, breaking it up with a spoon, and cook until browned.

4. Stir in the jalapeño, diced tomato, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for another 3-4 minutes.

5. Add the corn and stir well, allowing the flavors to combine. Cook for an additional 2 minutes.

6. Squeeze fresh lime juice over the mixture and stir in chopped cilantro.

7. Sprinkle with shredded cheese if desired and let it melt slightly.
