Description
This easy and refreshing cucumber salad is inspired by the famous Din Tai Fung appetizer. It’s crunchy, garlicky, and packed with umami flavors—perfect as a side dish or snack!
Ingredients
•2 Persian cucumbers (or 1 English cucumber)
•1 tsp salt
•2 cloves garlic, minced
•1 tbsp soy sauce
•1 tbsp rice vinegar
•1 tsp sugar
•1 tsp sesame oil
•1/2 tsp chili oil (optional)
•1/2 tsp toasted sesame seeds
Instructions
1.Slice cucumbers into thick rounds.
2.Sprinkle with salt and let sit for 15 minutes.
3.Rinse and pat dry.
4.Mix garlic, soy sauce, rice vinegar, sugar, sesame oil, and chili oil.
5.Toss cucumbers in the sauce.
6.Refrigerate for 30 minutes.
7.Sprinkle with sesame seeds before serving.
