Anjappar Egg Fried Rice is a flavorful South Indian-style fried rice inspired by the famous Anjappar Chettinad restaurant. This dish is packed with fragrant basmati rice, scrambled eggs, aromatic spices, and a hint of soy sauce, creating a perfect fusion of South Indian and Indo-Chinese flavors. It’s a quick and delicious one-pot meal that pairs well with raita or chili chicken.
Ingredients
• 2 cups cooked basmati rice (cooled)
• 3 eggs
• 2 tbsp oil (sesame or sunflower)
• 1 onion, finely chopped
• 2 green chilies, slit
• 1 tsp ginger-garlic paste
• ½ cup carrots, finely chopped
• ½ cup capsicum, finely chopped
• 2 tbsp spring onions, chopped (for garnish)
• 1 tbsp soy sauce
• 1 tsp black pepper powder
• ½ tsp garam masala
• ½ tsp turmeric powder
• 1 tsp salt (adjust to taste)
Instructions
1. Heat oil in a wok or pan on medium-high heat.
2. Add chopped onions and green chilies, sauté until onions turn translucent.
3. Add ginger-garlic paste and stir-fry for a minute until the raw smell disappears.
4. Toss in the chopped carrots and capsicum, stir-fry for 2-3 minutes until slightly tender.
5. Push the vegetables to one side and crack the eggs into the pan. Scramble them until cooked.
6. Mix the scrambled eggs with the vegetables.
7. Add soy sauce, black pepper powder, turmeric, and garam masala. Stir well to combine.
8. Add the cooked and cooled basmati rice, mixing gently to avoid breaking the grains.
9. Cook for another 2-3 minutes, stirring occasionally.
10. Garnish with chopped spring onions and serve hot.
Notes
• Use cold, day-old rice for the best texture. Freshly cooked rice may turn mushy.
• Adjust spice levels based on your preference.
• A dash of vinegar or chili sauce can enhance the Indo-Chinese flavor.
